2016 'Barb's Block' Cabernet Sauvignon - 12 pack

100% Estate grown, the fruit for for the Barbs Block Cabernet Sauvignon was picked on the 23rd (Block 2) and 30th of March (Block 3) 2016, then fermented in small open fermenters, with the grapes spending between 7-12 days on skins. Maturation was in a combination of old new fine-grain French Hogsheads for 22 months maturation.
Colour: Deep rich red with a dark core
Aroma: Classic Cabernet nose. Vibrant cassis liquer, red fruits, a hint of cedar
Palate: Silky fine tannins, dark chocolate, a touch of cabernet leafiness, lovely ripeness and generosity, a pretty and focussed flavour profile. The 2016 vintage is showing to be an excellent vintage, with optimal ripeness and beautiful balance on display with this wine.
Food Match: Bool Lagoon prime lamb, matured cheese and crusty bread
